There is a discount bookstore by my house that has great deals. My most recent purchase from there is the Curry Bible. I made the mistake once of buying a Thai cookbook on super sale at Costco with recipes by Becky Johnson. What does a guera like Becky Johnson know? Probably a lot of things, but not Thai cuisine. The recipes were horrible. Luckily, this time, I checked. The recipes here were written by Mridula Baljekar. Ethnic? check. Delicious? proven so.

TIKKA MASALA
ingredientschicken (I substituted tofu)
14 oz can of diced tomatoes
1 1/4 cup heavy cream
1 cube chicken bouillon
2 tbs vegetable oil
1 garlic clove
1 seeded red chile
2 tsp paprika
2 tsp cumin
salt & pepper to taste
cilantro as garnish
serve with basmati rice

Trina, there are a million reasons I'm glad I'm living with you next year. This is one of them! I can't wait to be creative cookers together....with some recipes for sure.
